Healthy Huevos Rancheros

If Huevos Rancheros had a #1 fan I think it’d be my dad. And then I’d come in as a close second. Huevos Rancheros for breakfast? Duh. Huevos Rancheros again for dinner? Yup. The good news is this recipe is a healthier version on the Mexican classic.


I had every intention of making corn tortillas from scratch. So um, yeah. That didn’t happen.

I used fat-free refried black beans (courtesy of Trader Joes of course) and didn’t add any oil to warm up the tortillas. The pico de gallo is simple, subbing tomato for red bell pepper, white onion, freshly chopped cilantro, and a few squeezes of lime. The eggs are free range and organic of course. Of course.

Ingredients
  • For the Bell Pepper Pico de Gallo
  • - 1 red bell pepper, diced
  • - ¼ medium white onion, diced
  • - 1 handful cilantro, roughly chopped
  • - juice of one lime
  • For the Huevos Rancheros
  • - 1 15 oz can of fat-free refried black beans
  • - 4 corn tortillas
  • - 4 eggs
Instructions
  1. For the Bell Pepper Pico de Gallo
  2. Combine the diced bell pepper, onion, cilantro, and juice for one lime in a bowl. Stir and let marinate for 15-20 minutes.
  3. For the Huevos Rancheros
  4. In a sauce pan over medium heat, warm the refried black beans until heated throughout. Turn off low, cover, and keep warm.
  5. Heat up corn tortillas on a skillet using NO oil. Keep in a tortilla warmer while you cook your eggs.
  6. In a non stick pan over medium heat, cook your 4 eggs over easy. Make sure you put down a little olive oil so that they can slide off easily without breaking the yolk.
  7. Assemble the huevos rancheros by putting two tortillas on a plate. Smear about two heaping spoonfuls of refried black beans on each tortilla. Top each tortilla with a fried egg, pico de gallo, and a squeeze of lime.

 

You may or may not find yourself making these for breakfast and dinner every day this week. So stock up on the ingredients!

    Your huevos rancheros would have been better if you used Larry’s Southwestern Ranchero Sauce. All-natural, vegetarian, gluten free and delicious.
