Sweet Potato Hash

  • 4 slices farm raised bacon, chopped
  • ¼ red onion, diced
  • 1 large sweet potato, peeled and cut into ½-inch cubes
  • 3 garlic cloves, minced
  • 10 brussels sprouts, stems removed and sliced
  • 1 egg per person
  • 1 tsp red pepper flakes
  • salt + pepper to taste
  1. Heat a heavy bottom pan over medium. Cook the bacon until desired crispiness.
  2. Remove bacon with a slotted spoon and set on a paper towel. Cook onion in the bacon fat for 3 minutes or until translucent. Add the sweet potato and garlic and cook until sweet potatoes are soft, about 10 minutes.
  3. Toss in brussel sprouts and cook until soft, about 5 minutes. Put the pot on low and cook a fried or poached egg for each person.
  4. Salt and pepper the veggie mixture to taste and stir in red pepper flakes.
  5. Divide among bowls and top with egg.
